Beef & Award Winning Ruby Mild Beer Casserole
What you will need.....
500g casserole beef, diced
4 rashers streaky bacon, diced
150g mushrooms, roughly chopped
12 whole shallots, peeled
1 clove of crushed garlic
2 onions, sliced
330mls Ruby mild
1 tablespoon plain flour
Salt and pepper to season
Pre-heat oven to 180 degrees, gas mark 4
Heat a little oil and pan fry the shallots for approx 5minutes on a medium heat. Once they have coloured, remove and add to casserole dish along with the mushrooms. Using the same pan sear the beef for approx 5 minutes then add in the flour and mix well to help thicken the gravy. Pour in the Ruby Mild and bring to the boil. Now add the mixture to your casserole.
Add sliced onions to the same pan and cook for a few minutes, then add the bacon and garlic and cook for a further minute. Add to the casserole dish along with plenty of seasoning.
Cover and cook for approximately 90 minutes in pre-heated oven.
